Monterey Jack 1840 Nacho’s...



Serves: 4

Preparation Time: 20 minutes

Ingredients:
1 Onion
2 Large ripe Tomatoes
2 Cloves of Garlic
Tomato Puree
2 Jalapeno Chillies
Can of Kidney Beans
Tabasco Sauce
200g Bag of Tortilla Chips
200g Pack of Monterey Jack 1840

Method:
Chop Onion finely and chop 2 tomotoes.
Heat oil in a wok or frying pan and cook onion until soft and golden.
Add 2 crushed cloves of garlic and chopped tomatoes, add one tablespoon of tomato puree. Cook until tomato is soft.
Chop 2 Jalapeno peppers, add half can of drained and mashed kidney beans. Add to the cooked onions and Garlic.
Cook for further 5 mins, stirring occasionally. Add to taste with Tabasco sauce, remove from heat.
Arrange half the corn chips in a shallow oven proof dish, spoon over half of the mixed onions, tomatoes and kidney beans. Cover with 2 slices of Monterey Jack 1840 cheese.
Add more chips on top then cover the rest of the mixed oinions, tomatoes and kidney beans on top as a second layer with 3 slices of Monterey Jack 1840 cheese.
Place dish in pre heated oven for 10 mins at 180ºC or Gas mark 4 until cheese is melted and golden.
