Leek and Ham Salad with Smoked Cheddar...

 

 

Serves: 4

Preparation Time: 5 minutes

 

Ingredients:

500 g small leeks, trimmed and washed.

Salt.

150g Smoked ham.

125g Smoked Cheddar Cheese.

For the dressing:

1 tblsp honey.

1 ½ tsp grainy mustard.

2 tblsp olive oil.

Salt and ground black pepper.

25g hazelnuts, roasted and chopped.

2 tsp lemon juice.

1 tblsp chopped fresh chives.

1 tblsp chopped fresh tarragon, plus extra sprigs for garnish.

 

Method:

Put the leeks into a pan of boiling salted water, cook for 3 -4 minutes or until just tender.

 

While the leeks are cooking, slice the ham and cheese into thin strips.

 

Drain the leeks and dry on absorbent paper.

 

Arrange on a flat serving dish with the ham and cheese.

 

For the dressing, put the honey, mustard, olive oil and salt and pepper in a small pan and heat until just warm.

 

Whisk in the chopped hazelnuts, lemon juice and herbs.

 

Drizzle the warm dressing over the salad and decorate with a few tarragon sprigs, serve immediately.
