Tricolour Pasta Salad with Mediterranean Cheese...

 

 

Serves: 4

Preparation Time: 10 minutes

 

Ingredients:

300g Mediterranean Cheese.

4 Tomatoes.

3 Cloves of garlic, peeled and chopped.

Sale and pepper to taste.

200g Tricolour pasta.

1 cup fresh basil leaves.

Spinach.

3 Spring Onions.

Half a Red Onion.

10 Black olives.

10 Green olives.

40g pine nuts.

4 tbsp of olive oil.

2 tbsp balsamic vinegar.

Lutuce.

 

Method:

Preheat the oven to 160 degrees.

 

Cook the pasta with a little salt. Drain and rinse with cold water.

 

Cut the tomatoes into quarters and remove the flesh. Place the quarters with the skin facing upwards on a oven proof plate.

 

Puree half of the basil and slice the rest. Add the salt and pepper to taste. Brush the mixture on to the tomato quarters. Put the tomatoes in the oven for 10 minutes.

 

Mince the cheese, spinach, spring onion, and olives and sprinkle with olive oil and salt. Then mix with the pasta and the remaining nuts.

 

Wash and dry the lettuce, put this on a plate and add the pasta. Garnish with warm tomatoes and sliced basil.
